Coming out of Galena, IL. The Blaum Bros. Distilling Co. have been making their own Bourbon, Rye, Wheat and Malt Whiskey. They also release sourced whiskeys, including Knotter (i.e. “not our”) Bourbon and Rye, distilled by MGP. They also produce Lead Mine Moonshine along with a Blaum Bros. CH Distillery, Chicago, IL. This distillery/pub offers their blend of vodka, distilled in Chicago. Also offer a few other spirits including an unaged whiskey and a sourced bourbon, likely from MGP. But their main product is the CH Vodka, available at Binny’s for just $20!
Chicago Distilling Co., Chicago, IL. With their Tagline “Best Spirits For The Best People”, their small batch spirits are tasty. Their Ceres Vodka, Stout Mash Bill Single Malt, and Finns Gin are generally available, but their other products like Shorty’s White Whiskey are in limited availability, so call in advance. Fox River Distilling Co., Geneva, IL. Opened in 2014, this distillery makes Rev. Mike’s White Lightning Moonshine Corn Whiskey, Bennett Mill Bourbon, Barrel + Rye Rye Whiskey and Old House Malt Whiskey. Generally Available, but call in advance to make sure the their products are available. (Available at Binny’s)
Koval Distillery, Chicago, IL. Initially, this Chicago distillery released whiskeys under the Lion’s Pride label. Now, all of their whiskeys are under the Koval label. They make a variety of different types of whiskey including bourbon, rye, millet, oat and four grain.
Their Bourbon is aged in heavily charred new oak barrels from Minnesota. Its mash bill includes ancient grains, and it is bottled at 94 proof. Grains are sourced from a local organic farmer collective in the Midwest. Small Batch. Single Barrel. Beautiful and tasty. Their Oat Whiskey is also special, so make sure to pick one of those as well. They also produce a line of handcrafted liqueurs. (Available at Binny’s)
